Hagalakayi hashi / bitter gourd hashi
Ingredients : 1 cup = 250 ml
  • Bitter gourd / hagalakayi - 1 big sized ( 1/2 cup after chopping)
  • Grated coconut - 1/4 to 1/2 cup
  • Curd - 1/2 cup
  • Salt - according to taste
For tempering :
  • Urad dal - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Hing - a pinch
  • Red byadagi chilly - 1/2 
  • Oil / ghee - 1 table spoon
Time : 30 minutes
Servings : 3 to 4

Method :
Step 1. Wash well and finely chop bitter gourd.


Step 2. Add a teaspoon of salt and mix well.  Leave it for few minutes. It releases water.



Step 3. Squeeze water of bitter gourd.


Step 4. Wash it in flowing water using drainer.


Step 5. Again squeeze its water.


Step 6. In a thick bottemed kadai, on LOW flame, add urad dal,  hing,  mustard seeds,  red chilly and oil. Saute well.


Step 7. When mustard splutters,  add washed and squeezed bitter gourd.


Step 8. Saute occasionally.


Step 9. After about five minutes,  add salt according to taste. Continue occasional sauting till the end.


Step 10. Turn off the stove when bitter gourd becomes crispy or change its colour to golden brown.


Step 11. Allow it to cool completely.


Step 12. Meanwhile, in a mixy jar,  grind grated coconut into fine paste by adding required water. Pour it to mixing bowl.



Step 13. Add curd to ground paste of coconut.


Step 14. Add fried and cooled bitter gourd and mix well.  Adjust the salt.


Step 15. Enjoy with rice!
