Ambode / mixed dal ambode / ambade

Ambode / mixed dal ambode / ambade is a traditional havyaka recipe. This recipe is prepared during festivals. There are many steps in preparing this recipe involving soaking, grinding, grating, mixing and frying.

Ingredients: 1 cup = 250 ml
  • Chana dal - 1 cup
  • Urad dal - 1/4 cup
  • Tur dal - 1 table spoon
  • Moong dal - 1 table spoon
  • grated coconut - 2 table spoons
  • Coriander seeds - 1 table spoon
  • Cumin seeds - 1.5 teaspoons
  • Red byadagi chillies - 4 to 5
  • Hing - 1/4 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander leaves - 2 table spoons (after chopping)
  • Curry leaves - 2 to 3 strands
  • Ginger - 2 inches
  • Green chilly - 1 teaspoon (after chopping) 
  • Oil - for deep frying
Step 1. Wash and soak chana dal, tur dal, urad dal for 2 to 3 hours in water (soak urad dal separately).

Step 2. Soak moong dal for about 10 minutes, then drain its water and keep aside. 

Step 3. After 2 hours, drain water and grind chana dal and tur dal together without adding any water. Grind it to coarse paste (just till dal pieces to 4 parts). Keep aside.

Step 4. Now grind urad dal, adding adding little amount of water (about 1 to 2 table spoons). Blend it to fine paste. Keep aside.

Step 5. Grind spices like coriander seeds, cumin seeds, red byadagi chillies, hing with grated coconut and turmeric powder, adding little quantity of water to make coarse paste (consistency of paste should be like chutney).

Step 6. Pour all ground pastes and moong dal (soaked and drained) in a mixing bowl.

Step 7. Wash and chop well other ingredients like coriander leaves, curry leaves, ginger and green chilly.

Step 8. Mix well all ground and chopped ingredients.

Step 8. Heat oil for deep frying. Meanwhile add salt according to taste and mix well.

 Step 9. Dip your palm in water and prepare ambode balls and flatten these.

Step 10. Prepare 7 to 8 flatten ambode once (or depending upon the frying pan capacity) and drop these one by one carefully in hot oil.

Step 11. Fry it for about one minute (don't saute immediately else ambode will break). Saute and fry for two more minutes. Then flip sides. Fry till ambode becomes crispy.

Step 12. Enjoy with meal or with tea!
