Uddina panaka / blackgram juice / Urad paanaka is a summer drink. Generally during afternoon time, this havyaka recipe is prepared. It gives cooling effect.
In panaka, more common are
- uddina panaka,
- greengram/hesaru paanaka,
- ragi panaka and
- ellina/til panaka.
Uddina panaka can be prepared in short amount of time. It takes around 20 minutes. Additionally you can add little amount of grated coconut as well.
Ingredients: 1 cup = 250 ml
- Black gram - 1/4 cup
- Jaggery - 1/4 cup + 2 table spoons
Duration: 20 minutes
Serves: 3 -4 people
Method:
Step 1. In a thick bottomed vessel, dry roast black gram on MEDIUM flame till you get aroma . It takes around 5 to 6 minutes. Turn off the stove when you get the aroma, but keep the roasted black gram in the same vessel as it is till it cools. Don't over roast, otherwise panaka becomes bitter in taste. How long to roast is the key in preparing tasty uddina panaka. It may be difficult to turn off the stove at exact moment at your first attempt, but I am sure you will learn in your second attempt.

Step 2. Grind the roasted, cooled blackgram after adding enough water into a fine paste.

Step 3. Pour it to a vessel and add jaggery, 2 to 3 cups of water. Mix well.

Tips:
- Do not over roast, otherwise it will be bitter
- Additionally add grated coconut for a unique taste
