Brinjal Bajji / Baje / Podi / badanekayi baje


Ingredients: 1 cup = 250 ml
  • Brinjal - 1 medium sized
  • Besan - 3/4 cup
  • Black cumin seeds - 1 tspoon
  • Hing - 1/4 tspoon
  • Coriander leaves - 2 table spoons (optional)
  • Salt - according to taste
  • Water - 3/4 cup


Method:

Step 1. In a mixing vessel, add besan (3/4 cup), black cumin seeds (1 tspoon), hing (1/4 tspoon), chopped coriander leaves (2 tbl spoons) and salt.


Step 2. Mix well.

Step 3. Add water (around 3/4 cup). Add more water to adjust consistency (dosa batter consistency).


Step 4. Chop the brinjal as shown in below picture. Pieces should be thicker.


Step 5. Dip the chopped brinjal pieces in besan batter and deep fry in hot oil.

Step 6. Fry both sides till change its color or till bubble stops.


Step 7. Enjoy with green chutney or as it is!
