Ragi mudde

Not a havyaka recipe, but ragi mudde is a healthy food. Here are the ingredients:

Ingredients: 1 cup = 250 ml
  • Ragi flour - 1 cup
  • Water - 3/4 cup
  • Onion - 1 (medium sized)
  • Tomato - 1 (medium sized)
  • Coriander leaves - 2 table spoons(after chopping)
  • Curry leaves - 1 strand
  • Mustard seeds - 1 tspoon
  • Cumin seeds - 1 tspoon
  • Salt ~ 1.5 tspoons
  • Ghee - 3 tspoons
Method:
Step 1. Finely chop onion, tomato and coriander leaves.


Step 2. In a thick bottomed kadhai, heat (on low flame) ghee/oil(1 teaspoon), then add cumin seeds (1 teaspoon), mustard seeds (1 teaspoon) and curry leaves (1 strand).


Step 3. When mustard splutters, add chopped onion and tomatoes. Saute well till raw smell of tomato disappears.

 Step 4. Add salt (1.5 teaspoons) and chopped coriander leaves. Mix well.

 

 Step 5. Pour water (3/4 cup) and allow it to boil.

 

 Step 6. Pour 1 cup of ragi flour exactly at the center of the kadhai.

 

 Step 7. Close the lid for about 5 minutes (on LOW FLAME). Then turn off the stove.


 Step 8. Now mix well.

 Step 9. Add ghee (1 teaspoon) to the ragi flour mixture and mix well.

 

 Step 10. Grease ghee to palm and prepare mudde from the mixture (before mixture cools).

 

Step 11. Serve hot with sambar / huruli saaru / garlic chutney. Enjoy!
