Potato paratha / Aloo paratha / batate paratha

Ingredients: 1 cup = 250 ml
For 8 parathas:
  • Wheat flour ~ 2 cups
  • Oil - 1 tspoon
  • Potatoes - 3
  • Onion - 1 (small sized)
  • Green chilly - 1
  • Grated ginger - 1/2 tspoon
  • Grated garlic - 1/2 tspoon
  • Coriander leaves - 2 table spoons (after chopping)
  • Turmeric powder - 1/2 t spoon
  • Ghee/oil - for roasting
  • Salt - according to taste
Method:
Step 1. To prepare dough: in a mixing bowl, add wheat flour (2 cups), oil (1 teaspoon) and salt (according to taste). Mix well. Then add sufficient water, knead well to prepare soft dough (consistency should be softer than normal chapathi dough). Keep it aside for about 15 minutes.

 

Step 2. Meanwhile pressure cook potatoes. After cooking, peel outer skin and mash well.


Step 3. Finely chop/grate other ingredients: onion (1 small), green chilly (1), ginger (1/2 tspoon), garlic (1/2 tspoon) and coriander leaves (2 table spoons). You can add curry leaves too.


Step 4. Add all chopped/grated ingredients, turmeric powder (1/2 teaspoon) and salt (1 teaspoon) to mashed potatoes. Mix well.
 

Step 5. Prepare eight balls from the potato mixture.

 

Step 6. Also prepare 8 balls with paratha dough.


 Step 7. As shown in below pictures, first roll paratha dough like puri, then stuff poatato balls in it. Pack it completely.
 
 
 

 Step 8. Roll carefully, use wheat flour for dusting. Paratha should be thicker than normal chapathi.


 Step 9. On hot tawa (medium to high flame), place the rolled paratha. Cook both sides adding ghee/ oil.
 

 Step 10. Serve hot with curd. Enjoy!
