Beetroot burfi

Beetroot burfi 

Ingredients: 1 cup = 250 ml
  • Beetroot - 1 cup (after grating)
  • Sugar - 1 cup
  • Grated coconut - 1 cup
  • Cardamom - 3 to 4
  • Ghee - 3 table spoons
  • Dry fruits (cashew nuts, raisins etc)
Method:
Step 1. Wash and peel its outer skin, grate it. Grate fresh coconut, ready other ingredients too.

Step 2. In a vessel, make sugar solution. By adding 1/2 cup of water to 1 cup of sugar, boil for 10 to 15 minutes. Keep aside.

Step 3. In a thick bottomed kadai, heat ghee(2 tbl spoons) and fry dry fruits, keep aside.

Step 4. In the same kadai, fry grated beetroot for few minutes till its raw smell disappears. Keep aside.

Step 5. In a same kadai fry grated coconut. Fry for few minutes.

Step 6. Add fried beetroot to this, mix well. Also add sugar solution.

Step 7. Mix well, stir well till it becomes thicker. Add dry fruits, cardamom powder, mix well.

Step 8. Grease plate with 1 tspoon of ghee. Pour above dough to this plate. Allow it to little cool.

Step 9.  Cut with knife and enjoy!
