Sugarcane juice dosa is a very tasty Havyaka recipe. You don't want to miss this during sugarcane season. It is similar to other Havyaka breakfast preparations such as neerdose. We can prepare sugarcane juice dosa / kabbina haalina dose in two ways in the final step : thick and thin dose. Some people like thin dose while some like thick kabbina haalina dose. All other steps are same, except the final dosa making step on tawa. While preparing thin dose, you may need banana leaves for making dose on tawa.
Ingredients: 1 cup = 250 ml
- Sugarcane juice (fresh, without ginger/pudina/lemon) - 2 to 3 cups
- Dosa rice- 1 cup
- Fenugreek / methi seeds - 1 teaspoon
- Avalakki- 1/2 cup
- Grated coconut- 1/2 cup
- Salt - according to taste
Preparation time: 2 hours (soaking) + 3 to 4 hours (for batter) + 15 minutes (dosa preparation).
Serves: 2-3.
Method:
Step 1: Wash dosa rice and then soak dosa rice and methi (1 teaspoon) in one cup of sugarcane juice (or in water) for 1-2 hours.

Step 3. Grind soaked rice and methi along with grated coconut adding around one cup of sugarcane juice. Grind it to fine paste.

Step 4. After grinding, add washed avalakki and grind again to fine paste.

Step 6. On hot dosa tawa (both non-stick or iron tawa can be used), on low to medium flame, prepare dosa. You can prepare thin dosa or thick dosa.
For thin dosa: you may use banana leaf for spreading batter. Close the lid for a minute.
Step 7. Flip side and cook for a minute.
Step 8: Enjoy with ghee!
Tip:
- If you want to keep the batter overnight for fermentation, you have to use 'boiled and then cooled' sugarcane juice instead of normal sugarcane juice.
