Palav / Pulav / Veg Pulao

Ingredients:

For palav masala:

  • Grated coconut - 3 tea spoons
  • garlic- 5
  • green chilly - 1
  • cinnamon - 1 inch
  • coriander leaves
  • cardamom - 2
  • ginger - 1 inch

For roasting/cooking:

  • Onion - 1
  • carrot - 2
  • beans ~ 1/2 to 1 cup
  • green peas ~ 1/2 cup
  • rice - 3.5 cups
  • water - 7 cups

Mosar bajji(raita):

  • cucumber - 1
  • ginger - 1 teaspoon
  • Onion - 1/4
  • curd - 2 tablespoons
  • salt

Method:

Step 1. Preparing palav masala: Grind all the ingredients with water.

Step 2. Cut all the vegetables.

Step 3. Wash rice (I used sona masuri) and keep aside.

Step 4. In a cooker, on low flame, add a teaspoon of ghee and fry onions till they turn pale yellow.Keep aside.

Step 5. In the same cooker, add a teaspoon of ghee, fry all vegetables and add salt. Fry for 3 minutes.

Step 6. Add masala, fry for three more minutes.

Step 7. Add rice, fry for a minute.

Step 8. Add onion and add 7 cups of water. Add salt.

Step 9. Cook for 2 whistles.

Step 10. Prepare mosaru bajji(raita) by grating cucumber and add chopped onion, ginger and curd. Add salt and mix well. Serve with pulao.
