I wish you a very happy and prosperous Deepavali. Hope this festival brings you lots of happiness. Today I writing about Deepavali special Kadubu.
Ingredients: 1 cup = 250 ml
- Pumpkin - 3 cups after grating (around 1/2 kg)
- Idli rava/ Akki kadi - 1.25 cups
- Grated coconut - 1.25 cups
- Jaggery - 1.75 cups
- Turmeric leaves - 10
- Cardamom - 2
- Salt - a pinch for taste
Step 1. Wash and peel the outer skin of pumpkin. Grate using bigger sized grater.
Step 2. Grate coconut. Measure other ingredients like jaggery and idli rava. Wash idli rava and drain its water.

Step 4. When jaggery melts and mixture becomes watery leave it for another 5 minutes to remove raw smell of pumpkin.
Step 5. Now add grated coconut and washed and drained idli rava together. Mix well.
Step 6. Add a pinch of salt and powdered cardamom to this mixture, saute well otherwise it sticks to khadhai. When the mixture thickens (around 5 minutes), switch off the stove.
Step 7. Wash turmeric leaves and let it dry.
Step 8. Keep two leaves together in plus shape as shown in below pic. Place some pumpkin mixture and fold.
Step 9. Cook in steamer for 40 minutes, on high flame.
Step 10. Enjoy!
