Vade / chauti special vade
Ingredients: 1 cup = 250 ml

  • Dosa rice - 1 kg
  • Urad dal - 100 gm
  • Methi seeds - 2 tspoon
  • Grated coconut - 2 cups
  • Green chillies - 15(if it is small) / 4 to 5 (if it is bigger size)
  • Hing - 1 big chana sized / 1 tspoon (powder)
  • Turmeric powder - 1/2 tspoon
  • Cumin seeds - 1 tbl spoon
  • Mustard seeds - 1/4 cup 
  • Carrom seeds - 1/2 tbl spoon
  • Salt - according to taste

Preparation time: around 5 hours
Cooking time: 2 hours
Yield: 125


Step 1: Wash dosa rice(1 kg), urad dal (100 gm) and methi seeds(2 t spoon). Soak separately for 2 hours.

Step 2. Drain off water from Dosa rice and spread it on a clean cloth about 10 to 15 minutes for drying (you can keep rice under fan for faster drying).
Step 3. Grind it to make a fine powder.


Step 4. Grind soaked urad dal and methi seeds by adding some water (idli consistency). After grinding urad dal pour some water to mixer jar and keep it aside for using in next steps.

Step 5. Grate coconut (2 cups) and grind it along with cumin seeds(1 tbl spoon), mustard seeds(1/4 cup), turmeric powder(1/2 tspoon), hing (one big chana sized) and green chillies (15 small) by adding sufficient water.

Step 6. When grated coconut mixture becomes fine paste, add washed carrom seeds(1/2 tbl spoon) to it. Grind it for 30 seconds for mixing. Pour it to a big container, add water of urad dal (in step 4) to this mixer jar and pour it to coconut paste container. Also add urad dal paste and salt (according to taste)to it and mix well.

Step 7. Add rice powder to it and mix well. If you need add some more water. The consistency should be thicker than chapati dough. Keep aside for 2 hours.
Step 8. After 2 hours kneed well and apply some oil to palm and make small lemon sized ball. 
Step 9. Apply some oil to banana leaf piece (you can use plastic if banana leaf not available)and also to one transparent plastic piece, put one vade ball on it. Then press it with presser or chapati roller. Make a small hole in the middle with finger.

Step 10. Deep fry vade in both sides till its colour changes.
