Ridge gourd bajji / hirekayi bajji

Ridge gourd bajji / hirekayi bajji is a havyaka recipe. Ridge gourd is used to prepare many recipes such as heerekayi dose, paladya.


  • Ridge gourd/ Heerekayi - 1(big) or 2(small)
  • Grated coconut - fistful
  • Green chilly - 1/2
  • Sugar/jaggery - 1 to 2 tbl spoons
  • Salt - as required

For seasoning:

  • Cumin seeds - 1 tspoon
  • Mustard seeds - 1 tspoon
  • Red chilly - 1
  • Oil - 1 tspoon

Step 1. Wash and peel outer skin of ridge gourd, chop roughly. Add sugar/jaggery, salt and 1/2 cup of water or as required and cook for about 10 minutes.

Step 2. After cooking keep it aside for cooling. Extract its water and use this for grinding (next step).

Step 3. Grind grated coconut along with green chilly in cooled-cooked water from previous step, turn it into a coarse paste. Pour it to a vessel.

Step 4. Grind cooked and cooled ridge gourd. Pour it to above paste. Mix well.

Step 5. Season it with cumin seeds, mustard seeds and red chilly in oil.
