Ingredients: (1 cup=100 ml)
- Dosa rice - 2.5 cups
- Methi seeds - 1 tspoon
- Urad dal - 3/4 cup
- Chana dal - 2 tspoons
- Poha (thin) - 1/4 cup
- Rava (ordinary/small) - 2 tspoon
- Oil for dosa roasting
- Salt ~taste
For red chutney (Chutney quantity for 12 dosa):
- Red chillies (soaked in water overnight~8hrs) - 3
- Onion - 2 medium
- Garlic - 2 cloves

For potato palya:
Ingredients:
- Potatoes - 3 large sized
- Onion - 1 medium sized
- Oil - 2 tspoons
- Chana dal - 2 tspoons
- Urad dal - 2 tspoons
- Mustard seeds - 1 tspoon
- Hing - 1/2 tspoon
- Curry leaves - 1 strand
- Termeric powder - a pinch
- Green chillies - 3 to 4
- Ginger - 1 tspoon
- Sugar - 1 tspoon
- Amchur powder/ huli pudi - 1 tspoon
- Salt for taste
Method:
(A) Potato Palya:
Step 1. Boil potatoes and peel outer skin, mash roughly.
Step 2. In a kadai, heat oil, then add Chana dal, urad dal, masturd seeds, hing, curry leaves. Saute till mustard splutters.
Step 3. Then add a pinch of turmeric powder, chopped green chillies and ginger. Saute till raw smell of ginger disappears.
Step 4. Then add chopped onion, saute for 2 more minutes.
Step 5. Now add boiled and mashed potatoes, mix well.
Step 6. Add sugar, salt and amchur powder/huli pudi, mix well. Close lid for 2 minutes. Potato palya will be ready.
(B) Red Chutney:
Step 1. Soak red chilies in water overnight.

Step 2. For red chutney, add onion, garlic along with soaked red chillies, grind it to a course paste (if you want more spicy add more red chillies)

Step 1. Soak dosa rice+methi seeds and urad dal +chana dal in separately for at least one hour.

Step 2. Grind soaked dosa rice & methi seeds along with washed poha, keep aside.

Step 3. Grind urad dal+chana dal once, pour it to ground rice batter, mix well. Keep it aside for fermentation (overnight).

Step 4. Add rava, sugar and salt to fermented batter, mix well.

Step 5. Prepare thin dosa, pour a tspoon of oil on dosa.

Step 6. Apply red chutney on dosa as shown in pictures. Roast dosa for a minute.
