Kashi Halwa/ Pumpkin Halwa is recommended from my side. I request you to try it. This is easier, requires very few ingredients, and tastier. And do tell me how was it.
Ingredients: (1 cup = 250 ml)
Pumpkin- after grating 2 cups.
Sugar- 1.5 cups,
Ghee- 2 teaspoons,
Cashew-nuts/almonds few.
Cardamom-3
Salt - a pinch.
Method:
Step 1. Peel and remove the seeds of the pumpkin. Grate it making thicker pieces.

Exactly two cups of pumpkin!:) |
Step 2. In a vessel, add 1/4 cup of water and add grated pumpkin. Cook in low flame till water evaporates. Closing the lid makes it quicker. (This step takes around 10-15 minutes).
Step 3. Add 2 teaspoons of ghee and stir for 2-3 minutes
(Low flame).
Step 4. Add sugar and stir occasionally till it gets thicker in consistency.
(Low flame)
Step 5. Add cardamom powder and stir. Add almond/cashew-nut pieces.
(Low flame)
Step 6. Enjoy!
Tips:
- Add a pinch of salt along with sugar
- Don't use milk instead of water. Once I used milk and milk turned into paneer :)
